An aquastat works similarly to a furnace limit switch in that it keeps the central heating unit at a safe operating temperature. Every aquastat has two settings: a high setting and a low setting.
Most boilers aren't designed to boil water, despite their name. In a system that isn't suited for it, this would result in steam and a dangerous buildup of pressure. As a result, when the boiler hits the high-temperature limit, the aquastat turns it off. This keeps the water warm but not quite boiling.
